This honey comes from the heather, or ling, which grows on the high moorlands of Derbyshire and Staffordshire. It had a distinctive, strong taste and a jelly-like texture which traps air bubbles, giving a
distinctive appearance in the jar. The heather blooms in August, giving the moors their famous purple colour but, as the weather conditions at higher altitudes can be poor even in high summer, the crop of honey varies dramatically year to year.
